This is one of Steve's favorite meals. When we were dating, we decided to host a chicken spaghetti party. Everyone had to bring their version of it. We were going to judge to see who's had the best, but it just didn't happen. We ended up coming up with a supper club. It lasted about a year, then every ones schedule got out of whack. Also, this is one of Steve's Aunt Debbie's favorites. I wanted to put it on here just for her. She's a total sweetheart. I really do wish all of you could meet my family. I'm so blessed with my family, and my new family. I'm just one blessed girl.
3 chicken breast
6 chicken thighs
1/2 stick of butter
Save your chicken broth, when you boil your chicken
1 tablespoon kosher salt
8 ounce mushrooms, sliced
3 celery sticks, chopped
1 onion, chopped
1 teaspoon minced garlic
3 tablespoon olive oil
2.25 ounce sliced black olives
10 ounce Rotel
7 ounce spaghetti noodles, boiled
1 pound Velveeta, cubed
1 1/2 teaspoons black pepper
1 1/2 cup shredded cheddar cheese
In large pot add chicken, 4 cups of water, 1/2 stick of butter, kosher salt. The butter and dark meat make a richer chicken broth. Bring to boil, and cook until chicken is done. Save your broth.
In large skillet, heat olive oil to medium heat. Saute celery, onion, mushrooms, and garlic until they become tender.
Shred chicken; adding it and the black olives, and Velveeta to vegetable mixture. Stir in 1 1/2 teaspoons of black pepper.
Cook on simmer until cheese has melted.
Stir in one cup of the reserved chicken broth, noodles, and top it with cheddar cheese. Bake at 350 degrees for 45 minutes to 1 hour.
