Queen of Puddings

Queen of Puddings
2 tablespoons lemon zest
2 tablesoons sugar
4 eggs, separated
2 tablespoons sugar, additional
1/2 cup raspberry jam
3 cups milk
4 tablespoons butter
6 slices firm bread, crust removed

Combine milk and butter in a saucepan, and heat to a simmer over medium-high heat. When milk/butter mixture reachesa a simmer, and butter is melted, remove pan from heat and add bread, lemon zest and 2 tablespoons sugar.

Remove from heat and add bread into mixture. Allow to set for 20 minutes.

Add egg yolks and beat with whisk.

Pour into 9x13 casserole dish; sprayed with Pam cooking spray. Bake at 350 degrees for 25 minutes.

Spread jam carefully over the top.


In small mixing bowl; with electric mixer, mix egg whites and 2 tablespoons of sugar until it peaks. Spread over jam and bake for another 10 to 15 minutes or until toasty brown.


This is a little taste of the Irish and scrumptious!

Corn Beef Hash


Corn beef hash
leftover corn beef - about 1 to 1/2 cups
4 small red potatoes
2 eggs
1 teaspoon salt and black pepper
1/2 teaspoon hot sauce
2 tablespoons olive oil

In food processor chop up your corn beef; add to skillet with olive oil.


Add chopped potatoes to processor and do the same; adding to the skillet. Salt and pepper. Cook for about 15 minutes.

Fry your eggs.

Serve with egg on top and a dash of hot sauce.

Reuben Sandwich


Reuben Sandwich
Serves 2
6 slices of leftover corn beef
1 can sauerkraut, heated
2 tablespoons Thousand Island Dressing
4 slices rye bread
2 slices Swiss cheese

Toast bread in oven. Top with corn beef, kraut, and cheese. Place back in the oven until cheese melts. Add dressing to one slice of the bread, and serve.

Today is my Baby Girl's 22nd birthday. She really is my pride and joy. There's nothing like a mother's love for her children. Happy Birthday  Natalie, I love you more. Hugs, Kisses and More Loves!

When she was younger, she came up with every time we talk, we have to end with I love you. That's even if we're in a disagreement. She always wants that to be our last words. I love that about her.

Corn beef and Cabbage


Corn beef and Cabbage
Corn beef (I bought the pre-mixed)
1 head of cabbage, cut into 4th's
4 to 5 small red potatoes, cut into 4th's
2 cups water

Add all to crock-pot and cook on low for 8 hours.

You have to have cornbeef and cabbage for Saint Patrick's Day. It's the luck of the Irish week. Come back tomorrow for reuben sandwiches.

Butternut Squash Fries

Butternut Squash Fries
1 butternut squash, peeled
olive oil
chili powder
brown sugar

These are so simple and delicious.

Cut up your butternut squash. Sprinkle with olive oil, chili powder, and brown sugar. Bake at 400 degrees for about 20 to 25 minutes.
These were so delicious. The chili powder gave it the heat it needs and the brown sugar the sweetness it needed. Great to serve with Robin's Veggie Grill Cheese.

Robin's Veggie Grill Cheese Sandwich

Robin's Veggie Cheese Sandwich
Rye bread
Havarti cheese
Gruyere cheese
tomato
fresh spinach
spicy brown mustard
butter

Heat skillet to medium heat with cooking spray. Butter one side of each bread. Face butter side down; topping with one slice of Havarti cheese, Gruyere cheese, tomato, and spinach. On opposite side of one slice of bread, spread spicy brown mustard to it and place mustard side down to sandwich. Cook turning once for a grill cheese sandwich.



So simple and I really enjoyed this. I will be making this one again.
