Mini Strawberry Fried Pies

Mini Strawberry Fried Pies
8 ounce frozen strawberries
2 tablespoons cornstarch
1/2 cup sugar
1/2 cup powdered sugar
1 box of 2 roll out pie crust
2 cups vegetable oil

These are simple and delicious.

In medium sauce pan add strawberries and sugar. Let it cook down; then with potato masher, mash them  up.
Add corn starch and on medium heat, stir until thickened.
Roll out pie crust on waxed paper, and sprinkle with flour (so it will not stick). Cut out circles about 4 1/2" round. I used a large a large plastic lid. You can use a cookie cutter.

Place 1 tablespoons of strawberries in the center of the circle.
Fold in half. With fork press down and seal the edges.
Heat oil in large skillet to medium-high heat. Do not put pies in, until you know the oil is hot. I sprinkle a little flour in the oil, if it sizzles; then you know its ready. Drop your pies in; turning only once. this doesn't take long. Cook until brown on both sides. Sprinkle with powdered sugar and serve. This made about 12 mini pies.

Oreo Cake

Oreo Cake aka Snake Charmer
Blind date story will be at the end. This is an insert from my "not" published book "Blind Ingredients". Agents do not like taking on new writers. I have to say, they are missing out. all you have these days is movie stars or reality TV stars books or some that have been around forever. I guess, they know it will be a hit in sales if you have a celebrity writing it. Pooh on them for not giving me a chance, but I'm not giving up. I'll send out another round to some more soon.

OH...I didn't tell ya'll about my wonderful dream I had. Paula Deen and I were cooking together and she wanted to help me get my book published. I'm not for sure if I believe in signs or not, but if that was one; TRUST ME, I'LL BE A BELIEVER in them. ha!

1/2 pint vanilla ice-cream, soften
1 cup crushed Oreo cookies
8 ounces of Cool whip, soften
Small cake or brownie pan - I like to use a metal pan


So simple. In large mixing bowl; mix all together. Place in small cake pan; covering in foil. Put in freezer over  night.

I added a few more Oreo's to the top.

Your kids and even grown-up kids will love this. I use to make this all the time for Natalie's birthday.

Snake charmer:
Can you remember when cell phones were stationed in your car? I was heading to work one morning when a radio station said they were giving away N’Sync (Natalie’s favorite band at the time) concert tickets to callers. So I automatically started calling and hitting redial. It had been raining, and when I looked up there was a dully truck in front of me with a steel tommy-lift gate. You guessed it, I slid right into it.

Okay, let me back up a little bit. A friend down the street had been telling me about this guy she wanted to fix me up with, but I didn’t want to set up at the time so I kept blowing her off.

I called her from my cell phone (the one that caused me to have the wreck).  The truck didn’t even have a scratch on it, but mine was caved in at the front right tire and my bumper was hanging off. So my friend told me to go to this car place and ask for this person (the guy she wanted me to go out with). Oh my gosh, he was gorgeous! He did help me with my car and told me where to go to get it fixed.

One more time, let me back up. The week before the accident, I had told my mom that I just wanted a man that loves God, likes to go to the farmer’s market and wants a best friend.

Now get this. He called me that night and guess what he said? Just what I had told my mom the week before. It was karma, and this guy had me hooked. We had a wonderful time on our date. He always said the right thing, opened the car door, the works! Everything seemed wonderful.

Then the Kenny Wayne Shepherd Band came into town for a local music festival. He was supposed to meet me and a couple of friends at the show after work. We went early to get a table at this local patio bar. He was running late, so I called. NO ANSWER. I waited an hour longer and called again. NO ANSWER. By that time I was getting worried about him, and I couldn’t even have fun. So we missed the concert and my friends drove me by his apartment, thinking something terrible had happened. I worried and cried all weekend.

The next week he called with some lame excuse involving one of his brothers. There was something different in his voice. We went out a few more times and everything seemed to be back to normal. He went to Florida for a week and called everyday telling me how much he missed me. The following week I went to Florida with my family and called him every day also.

When I got back, I thought it had been two weeks and I’d missed him. I bet he’s missed me too. We had made plans to do something, and once again I waited and waited. NOTHING. Needless to say, that was the last of him.

MORAL: Don’t always believe a snake charmer, even if he says all the right things.

Banana Pudding Ice-Creamery

Banana Pudding Ice-Creamery
2 bananas, sliced
2 cups vanilla wafers, crunched
1 small box vanilla pudding, mixed as directed and chilled
8 ounce Cool Whip
1/2 pint vanilla ice-cream

Lay your ice-cream and Cool whip out to soften.In big bowl mix together and add wafers. Then stir in pudding.
Put in plastic dish and put in freezer for at least 1 hour.
Banana Pudding is one of my favorites; plus ice-cream is my weakness. While I was in New Orleans visiting Natalie, she took me to this creamery place and I fell in love with it. Its a very soft ice-cream; like creamy. I have to admit, didn't take us long to eat this up.

Herb Biscuits

Herb Biscuits
1 can of biscuits
mixture of your favorite dried herbs
I used basil, oregano, chives, garlic salt (mix all together in a small bowl)
1 stick melted butter

Preheat oven to 400 degrees.
Tear your biscuit in half; then half it again. Repeat until all biscuits all into slices. Dip in butter, and place on cookie sheet. Sprinkle your herbs on top and bake as directed on biscuit can.
These are great with any meal, and so simple.

Tomato-Mozzarella Salad

Tomato-Mozzarella Salad
3 to 4 tomatoes
Fresh Mozzarella
Balsamic Vinegar
fresh basil leaves

This is so simple and refreshing. I love serving it with kabobs or flank steak. Slice your tomatoes and cheese. Alternate tomato and cheese. Sprinkle chopped basil and balsamic vinegar on top. Plus I sprinkled some Kosher salt to bring out the flavors.

Pork Po-Boy

This turned out so delicious. I will admit, I got my idea from Paula Deen's friend Donna Foley. She used beef and green bell pepper. I changed it up a bit. Thanks to Donna for the idea, and to Paula for showing it on her TV show. This is a must try and save recipe.

Pork Po-Boy
pork loin (I had about a 5 pound one)
8 garlic cloves, whole and peel skin off
salt and black pepper
2 tablespoons olive oil
2 roasted red peppers (jar)
1/4 cup flour
1 to 2 cups water
shredded lettuce
slice tomatoes
Miracle Whip
1/2 sliced onions
sliced dill pickles
hoagie rolls

Heat oil in dutch oven pot.

Make an inch slit in pork loin (deep) and insert garlic cloves; repeat all over the loin. Then salt and pepper all around the loin; rubbing it in.
Place in dutch oven pot and brown all four sides. Add enough water to make about one inch to the bottom of your pot. Put in onions and red peppers. Cook in oven, covered for 4 hours at 375 degrees.
Take you loin, peppers and onions out and shred.

Set your dutch oven pot to burner medium heat, stir in flour and make a gravy; stirring constantly until it thickens.

Put the pork, onions and peppers back in to simmer for about 5 minutes in the gravy.

Toast your hoagie rolls; then on one side spread some of the gravy to it, and the opposite side mayo. Add pork, peppers, onions, lettuce, tomatoes and dill pickle slices. This is a little bite of Nola for sure.

Steph's Bacon-Cheese Grilled Sandwich

My friend Stephanie gave me this recipe. Ya'll she's moving away from me, out of state. I'm sure going to miss her. When we meet, we became instant friends. Talk about a magnetic connection. Maybe that's because we have the same birthday. Well... not years, but month and day. I call her one of my birthday sista. She told me about this recipe and I had to try it. It's a keeper ya'll.

Steph's Bacon-Cheese Grilled Sandwich
(for 2)
4 pieces of bread
4 slices of American Cheese
4 slices tomatoes, thinly
4 to 5 pieces of bacon, cooked and crumbled
2 tablespoons mayo
1 teaspoon cayenne pepper
Pam cooking spray

Mix together mayo and cayenne pepper. Spread on one side of bread.

Spray skillet with Pam cooking spray and put on medium heat. Place bread down on mayo side. Lay one slice of cheese down, topping with crumbled bacon and 2 slices of tomatoes, and top with the other slice of cheese and bread.

Grill it like you do a grill cheese. Something about the mayo mixture instead of butter makes this so yummy. Thanks Steph for sharing.

Aunt Sue's Spaghetti

My Great Aunt Sue will be 86, on March 1st. She's been down in her back and I've been cooking for her. I got so tickled at her the other day, she told me how she wanted her spaghetti cooked. Of course I did it the way she wanted me to.

Aunt Sue's Spaghetti
1 1/2 ground hamburger
1- 14 ounce tomato sauce
1/2 can water
1 package of dry spaghetti mix
1/2 bell pepper, chopped
1/2 onion, chopped
1 package of spaghetti noodles, cooked
2 tablespoons olive oil

In large skillet saute onions and pepper in olive oil. Add hamburger and cook until browned. Add your spaghetti mix, tomato sauce and water. Simmer for about 30 minutes; adding your noodles and mixing it up.

Turned out good. My Aunt Sue was really happy to see me with her spaghetti.

Spinach Stuffed Pork Loin

Spinach Stuffed Pork Loin
1 pound pork loin
2 cups fresh spinach
1/4 cup chopped onions
4 ounce cream cheese
1 beef bouillon cube
1 tablespoon olive oil

Preheat oven 350 degrees.

In skillet heat olive oil and saute spinach and onions. Add bouillon cube and mash it up. Mix together spinach mixture and cream cheese.

Slice loin in half, and pour spinach mixture inside loin. Salt and pepper loin.
I should of used kitchen string to tie it up, but I forgot. It still tasted yummy though.

Bake for 2 hours covered, the last 15 minutes uncover. Let rest for 15 minutes, then slice and serve.

This is on the low carb diet, very yummy to.

Barbecue Chicken Salad

Barbecue Chicken Salad
2 to 3 boneless, skinless chicken breast
1 1/2 cups barbecue sauce
lettuce
grape tomatoes
green onions
1 can whole corn, drained
1 can black beans, drained
sour cream
sliced black olives

Preheat oven to 350 degrees. In baking pan, cook chicken and barbecue sauce for one  hour, covered. Shred when it has cooled off and let it soak in the sauce.

Mix together lettuce, tomatoes, green onions, corn, black olives, and black beans; topping with shredded chicken and dollop of sour cream.

So simple and so yummy.

Next week is miscellaneous week, you don't want to miss it. It has a little bit of this and that.

Grown Up Beanie Weenies

Grown Up Beanie Weenies
22 ounce Pork 'N Beans
16 ounce Polish sausage, sliced into 1/2"
1 1/2 cup of barbecue sauce

Mix all together. Bake at 375 degrees for 45 minutes to 1 hour.

This is so simple. Remember as a kid, loving beanie weenies out of the can? This is great as a meal or a side dish.

Dill Potato Salad

Dill Potato Salad
4 to 5 red potatoes, washed and cubed (leave skin on)
2 tablespoons fresh dill, chopped
8 ounce sour cream
1/4 cup mayo
1 teaspoon Kosher salt
1 1/2 teaspoons black pepper
1 tablespoon finely chopped onion (optional)

Boil potatoes until tender; drain and mix in the rest of your ingredients. Stir it gently. This is great with barbecue. The dill gives it the extra punch and change from your regular potato salad recipe.

Cilantro - Chili Butter Corn on the Cob

My whoopsie... I didn't give you the corn on the cob recipe with my Mexican Burger.

6 Ears of Corn on the Cob
1/2 stick butter - soften (lay out for about 30 minutes)
1 tablespoon chili powder
1 tablespoon fresh chopped cilantro

Pull back the husk and silk your corn and wash.  Don't pull off the husk.  Set aside.

Mix butter, chili powder and cilantro with fork until mixed really good.  Put it in Saran Wrap and form it into a roll.  Stick in refrigerator for 30 minutes.

Slice off 1" of butter and smother the corn with it and repeat  until all 6 ears have been done.  Pull the husk up to cover it.  Cook on grill for 20 to 30 minutes, turning it once or twice.  Remove the husk and its so finger lickin good.

3 Bake Beans

3 Bake Beans
1 can black beans, drained and rinsed
1 can pinto beans
1 can kidney beans
1 cup barbecue sauce
1/4 cup chopped onions
4 slices of bacon

Pour all into casserole dish; stirring in the barbecue sauce and onions; topping with bacon. Bake at 375 degrees for 45 minutes to 1 hour.

Simple and delicious with barbecue.

My Barbecue Sauce

My Barbecue Sauce
2 red bell peppers (in jar)
2 tablespoons olive oil
2 cups finely chopped onion
6 garlic cloves chopped
2 1/2 cups ketchup
13 ounce tomato sauce
1/4 cup Worcestershire sauce
1 cup brown sugar
1/2 cup white sugar
1/4 cup honey
1/8 cup apple cider vinegar
4 tablespoons brown spicy mustard
2 teaspoons salt
1 teaspoon lemonade mix
1 tablespoon cayenne pepper
1 tablespoon garlic salt

I know, a lot of ingredients; but I was determined to try and make my own. Believe me a lot cheaper to go buy a bottle. I think it turned out pretty good. It had the sweetness it needed and the heat for a kick. Just what I like in a barbecue sauce.

Sauce onion and garlic with olive oil; until soften. Add the rest of the ingredients and simmer for 2 hours so the flavors will marry together.

Serve over chicken, pork, or whatever you desire. I reserved a  cup for my 3 bake beans; which you will be getting the recipe this week.

Yogurt Parfait

Yogurt Parfait
Vanilla yogurt
fresh raspberries
fresh blueberries
honey oat granola (in cereal section)

In tall glasses, add yogurt, then berries (I mix them up), granola; repeating layers.
Simple and refreshing. I made these while Natalie and I were at the beach. I love quick summer breakfast treats or you could use this for a dessert or snack.

Mother/Daughter Weekend

Natalie and I had the best time. I got to Nola and we went to this little place called Tee-Eva's on Magazine Street. This woman can cook. If you ever go to New Orleans look this place up. My only regret is I didn't get my picture made with her. She has the best red beans and rice and the prices are cheap.

We got up the next day and went to Central Park. WOW - this place is amazing and worth the trip to walk through. We didn't get to go through all of it, but I have some pictures of what we did do.
When Natalie got out of class, we hit the road for the beach in Florida. I didn't realize all the spring breakers that would be there. But we had fun just hanging out together. Nothing like quality time with your child. We had some good laughs watching people.
Someone had recommended Boatyard for dinner. Loved the setting, but I think I ordered wrong. I love fresh tuna steak, but it had way too many seeds on it.
We couldn't believe that bird just flew up and sat there. Plus my beautiful daughter with a beautiful view. I love that girl and so proud of her.
