Veggie Quiche


Veggie Quiche
8 large eggs
1/2 cup buttermilk or you could use regular
2 cups spinach
2 tablespoons minced onion
2 cups sliced mushrooms
1/2 cup sliced grape tomatoes
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon olive oil
1 pie crust

Preheat oven to 350 degrees.

Saute all your vegetables in olive oil; until soften.



Whisk together your eggs, milk, salt and pepper; adding in your vegetables. Pour into pie crust and bake for 40 to 50 minutes.
