Easter

Scriptures: Matthew 28:1-20; Mark 16:1-20; Luke 24:1-49; John 20:1-25:25.

The reason we celebrate Easter.

Resurrection of Jesus Christ - Story Summary:

After Jesus was crucified, Joseph of Arimathea had Christ's body placed in his own tomb. A large stone covered the entrance and soldiers guarded the sealed tomb. On the third day, a Sunday, several women Mary Magdalene, Mary the mother of James, Joanna and Salome are all mentioned in the gospel accounts, went to the tomb at dawn to anoint the body of Jesus.

A violent earthquake took place as an angel from heaven rolled back the stone.The guards shook in fear as the angel, dressed in bright white, sat upon the stone. The angel announced to the women that Jesus who was crucified was no longer in the tomb. "He is risen, just as he said. "Then he instructed the women to inspect the tomb and see for themselves. Next he told them to go inform the disciples."

With a mixture of fear and joy they ran to obey the angel's command, but suddenly Jesus met them on their way. They fell at his feet and worshiped him. Jesus then said to them, "Do not be afraid. Go tell my brothers to go to Galilee. There they will see me."

When the guards reported what had happened to the chief priest, they bribed the soldiers with a large sum of money, telling them to lie and say that the disciples had stolen the body in the night.

After his resurrection, Jesus appeared to the women near the tomb and later at least twice to the disciples while they were gathered at a house in prayer. He visited two of the disciples on the road to Emmaus and he also appeared at the Sea of Galilee while several of the disciples were fishing.

I'm so thankful we have an Easter to celebrate each year. I'm thankful God loved us so much, that He sent His son to die on the cross for us. Close your eyes and picture when they crucified Jesus. Can you picture it? It makes me cry at first, I can't stand the thought of how cruel they were to Jesus, how they mocked him, beat him. Then when I picture the resurrection a huge smile comes across my face. He died to save me of my sins. Me that has messed up so many times in life. I'm so not perfect, I still make mistakes and He forgives me. That is just so HUGE for me.

Tapenade
1 cup black olives
1/4 cup capers
1 tablespoon anchovy paste
2 garlic cloves
1/3 cup virgin olive oil
lemon
Parmesan cheese
1 loaf multi-grain baguette

Fred Bread
1 loaf multi-grain baguette
3 to 4 tomatoes
pesto sauce
mozzarella cheese
olive oil

Yogurt Parfait
Vanilla yogurt
blue berries
raspberry
oatmeal honey granola (in cereal section)

Mediterranean Tray
cantaloupe
salami
assorted cubed cheeses
assorted olives
asparagus
prosciutto
kosher salt and black pepper

Easter is this weekend, so I'll have a little Easter story and Robinism. Then get ready for some Beach Treats!

Corn Pudding

Corn Pudding
14 ounce cream corn
1 box Jiffy cornbread mix
8 ounce sour cream
1 egg
1/4 cup milk
2 cups shredded cheese (I used cheddar)

Mix all together and bake at 375 degrees for 1 hour. This is almost like a corn dressing for Easter.

Scalloped Potatoes

Scalloped Potatoes
1 to 2 large baking potatoes, sliced thinly
2 tablespoons finely chopped onion
3 to 4 tablespoons butter
1 1/2 cups milk
2 cups shredded cheese

Preheat oven to 350 degrees.

Layer potatoes in the bottom of your baking dish.
Sprinkle flour on top; adding onion and cheese. Repeat layers; then add milk.
Whoops, sprinkle salt and pepper on top of each layer. I only did 3 layers, but you can do as many as you want. Bake for 1.5 hours.

Robin's English Peas


Robin's English Peas
12 ounce frozen english peas
1/2 cup water
1/2 cup milk
7 ounce sliced mushrooms, drained
5 ounce sliced water chestnuts, drained
1 tablespoon cornstarch
1/2 teaspoon salt and black pepper

Cook peas in water; until soft. Add the remaining ingredients; stirring the cornstarch in to thicken it.

This so simple and adds a kick to your regular ole english peas. I love mushrooms and the crunch with the water chestnuts.

Like My Grandmother's Stuffed Up Eggs

Bobo always got tickled at me calling deviled eggs, stuffed up eggs. She knew they were one of my favorites and every Easter she would make me some.

Like My Grandmother's Stuffed Up Eggs
6 eggs, boiled and peeled
2 tablespoons mayo
1 tablespoon minced onion
1 tablespoon sweet pickle relish
1/2 teaspoon salt and black pepper
sliced green olives, for garnishing
paprika, for garnishing

Slice your eggs lengthwise and take out the yolk. With fork smash them.

Add onion, relish, mayo, salt and pepper. Spoon in about a tablespoon into each egg whites.

Top with green olive and sprinkle  with paprika.

I had to eat a couple before I could even take my picture. I think I could eat these everyday.

Peach Gelatin Salad

My mom use to make this all the time and one of my all time favorites. So simple and delicious. Great for Easter or anytime.



Peach Gelatin Salad
1 large box peach Jell-o
2 cups hot water
1 small can crushed pineapples
1 - 8 ounce whipped cream cheese

Dissolve gelatin in 2 cups of hot water.

Break up cream cheese into the warm gelatin. Beat with mixer until it is dissolved. Add pineapples.

Chill for at least one  hour and serve.
