Roast Beef Burrito (for 2)
4 slices of roast beef, cut into strips
1 cup shredded cheddar cheese
1 cup mushrooms
1/2 cup sliced onions
4 flour tortillas
1 1/2 tablespoons olive oil
Heat oil in skillet on medium heat. Stir in vegetables and beef; adding soy sauce and ginger. Cook for 15 to 20 minutes. Serve over rice.
