Roast Beef on a budget for 2 all week.
I bought a 4.99 pound rump roast. I figured it out, this weeks grocery list cost me around $50.00. I enjoyed this challenge and came up with some tasty recipes. Something new everyday. I actually, came up with two extra recipes with this. One I'm going to use during sandwich week and the other was the taco casserole I gave you last week.
Rump Roast and Veggies
5 pound rump roast
2 tablespoons olive oil
2 cups water
16 ounce beef broth
2 celery sticks
1 carrot
1/2 onion
1 cup mushrooms
4 to 5 small red potatoes
1 tablespoon fresh thyme (optional)
salt and pepper
Roast Beef Hoagie with Blue Cheese Whipped Dressing
2 large slices of roast beef
2 hoagie rolls
1/2 onion
Blue Cheese Whipped Dressing
2 tablespoons blue cheese
4 ounce whipped cream cheese
1 tablespoon fresh thyme
3 tablespoons milk or half and half
Beef Pot Pie
3 to 4 slices roast beef
2 to 3 cups of your leftover veggies
2 tablespoons corn starch
14 ounce can sweet peas and carrots
Crust
1 1/2 cups flour
1 teaspoon baking powder
5 tablespoons Crisco shorten
5 tablespoons water
1/2 teaspoon salt
Roast Beef Burrito
4 slices roast beef
1 cup shredded cheddar cheese
1 cup mushrooms
1/2 cup onions
4 flour tortillas
1 1/2 tablespoons olive oil
Roast Beef Stir Fry
2 tablespoons olive oil
2 slices roast beef
14 ounce frozen stir fry vegetables
1/2 cup soy sauce
1 tablespoon ginger
1 teaspoon garlic powder
1 cup cooked brown rice
Pinto Beans and Leftover Roast Beef
1/2 pound dried pinto beans
the rest of your leftover roast beef and vegetables
2 jalapeno peppers
