Veggie Cheese Soup


Veggie Cheese Soup
12 ounce frozen mixed vegetables
1/2 cup finely chopped onion
1 cup sliced mushrooms
16 ounce chicken broth
2 cups shredded cheddar cheese
2 tablespoons olive oil


Saute onion and mushrooms in olive oil. Add frozen vegetables and chicken broth; cooking until soften.

Add in cheese and stir until melted. Serve ASAP!

This is so yummy on a cool night.
