Muffin Cheesecake

One of my mother's friends made these, and she shared the recipe with me. They are a treat and a must try.



Muffin Cheesecakes
20 paper muffin cups
2- 8 ounce cream cheese
1 can cherry pie filling or  blueberry
2 eggs
3/4 cup sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
20 vanilla wafers

Beat cream cheese; add sugar, lemon juice, and vanilla. Beat until smooth. Put a vanilla wafer in the bottom of the muffin cup, and fill 3/4 full with the mixture. Bake 20 minutes at 375 degrees.



Natalie put a little green food coloring in hers, to make it more festive looking.

Cool for 10 minutes. When cool, top with cherry pie filling. Cover and refrigerate, for at least 30 minutes.



These are so festive and great for family gatherings, Christmas or New Year's parties.
