Barbecue Chicken Salad

Barbecue Chicken Salad
2 to 3 boneless, skinless chicken breast
1 1/2 cups barbecue sauce
lettuce
grape tomatoes
green onions
1 can whole corn, drained
1 can black beans, drained
sour cream
sliced black olives

Preheat oven to 350 degrees. In baking pan, cook chicken and barbecue sauce for one  hour, covered. Shred when it has cooled off and let it soak in the sauce.

Mix together lettuce, tomatoes, green onions, corn, black olives, and black beans; topping with shredded chicken and dollop of sour cream.

So simple and so yummy.
