Spinach Stuffed Pork Loin

Spinach Stuffed Pork Loin
1 pound pork loin
2 cups fresh spinach
1/4 cup chopped onions
4 ounce cream cheese
1 beef bouillon cube
1 tablespoon olive oil

Preheat oven 350 degrees.

In skillet heat olive oil and saute spinach and onions. Add bouillon cube and mash it up. Mix together spinach mixture and cream cheese.

Slice loin in half, and pour spinach mixture inside loin. Salt and pepper loin.
I should of used kitchen string to tie it up, but I forgot. It still tasted yummy though.

Bake for 2 hours covered, the last 15 minutes uncover. Let rest for 15 minutes, then slice and serve.

This is on the low carb diet, very yummy to.
