Mother-in-law's Ham and Eggs


Mother-in-law Ham & Eggs
 My mother-in-law Diane gave me this recipe.  It's simple and looks elegant. A lot of her meals are simple, elegant and delicious.  She's an awesome cook, and very elegant herself.  I always love when we go to her house to eat.  You know your in for a treat.  This is great for lazy Saturday mornings, with very few ingredients.

Mother-In-Law Ham and Eggs
6 eggs
12 slices of deli ham
1 cup cheddar cheese or whatever cheese you have in your refrigerator
3 teaspoons milk
3 English muffins
hollandaise sauce mix

Spray your muffin pan with Pam cooking spray and preheat your oven to 350 degrees.  Use two slice of ham in each muffin cup, crisscrossing.  Crack an egg in each ham cup, and add 1/2 teaspoon of milk to each. 



Sprinkle cheddar cheese on top.  Bake for 30 minutes.


 Prepare hollandaise sauce as directed on package.

Toast English muffins.

Ready to stack?  First put your English muffin on plate, spoon out ham and eggs, and drizzle with hollandaise sauce.  Your family or friends will really think you went to a lot of trouble for this meal.
