Adult Grill Cheese

Okay, your children can eat this one to. Children love grill cheese sandwiches, this one you just adds a little bit more to it. Totally off the subject but, when I was pregnant - my biggest craving was grill cheese with pickle relish, mustard, and ketcup. Try it sometimes, I still like them to this day. ha!

Adult Grill Cheese
1/4 cup sliced mushrooms
1/4 sliced onions
1 tablespoon olive oil
2 big slices of roast beef
4 slices cheddar cheese
2 slices Swiss cheese
2 hoagie rolls
1 tablespoon butter

Heat skillet to medium heat. Butter rolls and place face down in skillet to toast them. Heat your oven to 300 degrees.

Saute onions and mushrooms in olive oil; until they soften.

Add Swiss cheese to one side of your roll, and cheddar to the other side. Place roast beef, mushrooms, and onions; then place in the oven, open faced for 15 minutes or until cheese has melted.

Just fold it over to a sandwich and serve. I served mine with dill pickle slices and grape tomatoes. This might be my new favorite grill cheese.

Quote of the day:

"Be like a duck. Calm on the surface, but paddling like the dickens underneath." - Michael Caine

Okay, this quote could be my life right now. Can't explain right now, but maybe in the next month or two. Loved this quote!
