Rump Roast and Veggies

This week we're trying something different. Budget for 2 with a 5 pound rump roast. I'm going to see how many different meals I can get out of this roast. Think about how much money you spend on meat a week. I spent $20 on a 5 pound rump roast and its going to make me 6 to 7 meals, maybe even more. I know that might sound like a lot, but if you bought chicken, hamburger, pork chops, etc. for 7 days; you would spend more than $20 bucks. The trick is to change it up with each meal. The first meal, is the traditional roast and vegetables.

Rump Roast and Veggies
5 pound rump roast
2 tablespoons olive oil
2 cups water
16 ounces beef broth
2 celery sticks, chopped
1 cup chopped carrots
1/2 onion, chopped
1 cup mushrooms, sliced
4 to 5 small potatoes, chopped into bite size pieces
1 tablespoon fresh thyme (optional)
salt and black pepper to taste

Heat big dutch oven to medium to high heat with olive oil. Salt and pepper roast all around. Add to pot and brown both sides.

Add chopped vegetables.

Add water and broth. Cook on simmer for 4 hours with lid on. Let your meat cool before slicing. This is a meal you need to cook on your day off, but so worth it.
