Roast Beef Burrito

Roast Beef Burrito (for 2)
4 slices of roast beef, cut into strips
1 cup shredded cheddar cheese
1 cup mushrooms
1/2 cup sliced onions
4 flour tortillas
1 1/2 tablespoons olive oil


Simple and delicious. Heat your skillet and olive oil; adding mushrooms and onions. Cook until soften.

Slice roast beef into strips. Lay 3 to 4 strips of beef to one tortilla; topping with mushroom, onions and cheese.


Keep your skillet heating at medium heat. Fold two sides of your tortilla in; then roll. Place in skillet and brown both sides.

Your ready to serve. You could serve it with salsa or sour cream, but I just served them without anything. Delicious, and I got another Mexican dish. ha!
