Taco Casserole

Taco Casserole
1 cup cooked brown rice
1 pound lean ground beef or turkey
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 cup pinto beans, drained (optional)
1/2 cup water
1/2 teaspoon crushed red pepper flakes
1 teaspoon garlic salt
2 tablespoons cumin
1 cup chopped lettuce
1 cup shredded cheddar cheese
This turned out very yummy. Just ask my friend Linda. She came over to eat and watch American Idol with me. I love that show.

Brown your hamburger meat with onion and bell pepper. Add crushed red pepper flakes, garlic salt, cumin, and water.

In large casserole dish layer your cooked brown rice, topping with hamburger mixture. I had leftover pinto beans from Budget Roast week, so I  added a cup of them on top.  Top with cheese and bake at 350 degrees for 15 to 20 minutes.
Top with lettuce and serve. This was so yummy and one portion is under 500 calories. Even my hungry husband liked it.
