Roast Beef Hoagie with Blue Cheese Whipped Dressing

This is so yummy and my husband loved it.

So, by now you sliced your beef and put it back into your pot with the veggies and broth. The meat has soaked up some of the broth and oh so yummy. Heat your 2 large slices of beef in a skillet with a little bit of the broth, just to warm it up.

Roast Beef Hoagie with Blue Cheese Whipped Dressing
2 large slices of roast beef cut lengthwise
2 hoagie rolls toasted
1/2 onion, sliced
11/2 tablespoons olive oil

Blue Cheese Whipped Dressing
2 tablespoons blue cheese
4 ounce whipped cream cheese
1 tablespoon fresh thyme
3 tablespoons milk or half and  half

Saute your onions in olive oil, until brown or caramelized.

In food processor; mix together all the blue cheese dressing together.

Are you ready to put this delicious sandwich together? If you are a blue cheese fan, then this is your new favorite sandwich.

Remember did you slice your roast beef lengthwise? Add one slice of it to each side of your toasted hoagie roll. Add your onions and blue cheese dressing. Now take a BIG BITE. What do you think?
