Mexican Flounder with black beans and corn



Mexican Flounder
4 flounder
Pam cooking spray
1 lime
cumin
coriander
salt
fresh cilantro, chopped for garnish

Black beans & Corn
1/4 cup chopped onion
1/4 cup chopped red bell pepper
1 garlic clove, minced
1 tablespoon olive oil
15 ounce black beans, drained
15 ounce whole corn
1 1/2 teaspoons cumin
1/2 teaspoon crushed red pepper

Spray oven dish with Pam cooking spray, and preheat oven to 350 degrees. Place flounder in dish; adding 1/2 lime juice on top of each piece of fish. Sprinkle with spices, and let it sit for 15 minutes. Slice the other half of the lime and add to the dish.

Cook for 15 minutes.

In large to medium sauce pan, heat oil to medium; adding onion, red pepper, and garlic. Saute until they are soft.

Add your beans, corn, and spices. Cook for about 15 minutes.

Garnish fish with chopped cilantro. This is such a simple meal, that takes no time to make. Also, healthy and I love Mexican flavors..
