Beef Pot Pie

I tried making a homemade pie crust, doesn't look so pretty but tasted good. You can buy a ready made one if you want to.

Beef Pot Pie
3 to 4 slices of roast beef, cut into bite size pieces
2 to 3 cups of your leftover veggies and beef stock
2 tablespoons corn starch
14 ounce can sweet peas and carrots, drained

Crust
1 1/2 cups flour
1 teaspoon baking powder
5 tablespoons Crisco shorten
5 tablespoons water
1/2 teaspoon salt

In medium sauce pan add beef and vegetables; stirring in corn starch to thicken it. Turn to low heat.

Mix all your ingredients of crust together with fork or pastry cutter.
Work it with your hands and make it into a ball. Set aside and let it sit for at least 15 minutes.
Sprinkle surface with flour and roll out your dough. Be sure to flour your rolling pin also.

I took my round casserole dish to measure. Turning it upside down; pressing down hard, and with a knife cutting around the dish.
Preheat your oven to 350 degrees. Turn your casserole dish up and pour in your roast and vegetable mixture; topping with pie crust.

Bake for 45 minutes to one hour or until golden brown on top.
