Robin's Salad

Robin's Salad
1 green apple, chopped in bite size pieces
1 cup green seedless grapes, sliced in half
1 cup chopped walnuts
4 cups fresh spinach
1/4 cup feta cheese
1/4 cup chopped purple onion
2 boneless, skinless chicken breast
1/2 cup sugar free apricot jam
1 tablespoon red wine vinegar
1 teaspoon olive oil



Mix all fruits, walnuts, spinach, and cheese together; set aside.

Preheat oven to 350 degrees.

Mix jam, red wine vinegar and olive oil together and pour over chicken. Bake for 45 minutes covered in oven. Slice and serve over salad  mixture. You will not even have to have a dressing, the sweetness of the chicken gives you enough to make you think you already have it on there.
