Boudin Breakfast Tortilla

Boudin Breakfast Tortilla. I hope you enjoy.



Boudin Breakfast Tortilla - serves 4
4 tortillas
3 boudin links
15.5 ounce can red beans
1 1/2 tablespoon onion, chopped
1 small jalapeno, seeded and chopped
4 fried eggs
1 avocado, sliced
4 tablespoons cheddar cheese
1 teaspoon olive oil

Sauce - basic Cajun sauce
1 cup Miracle Whip
2 tablespoon chili sauce
1 teaspoon garlic salt
1 teaspoon curry
1 teaspoon dry mustard
1/2 lime, juice

In small skillet, saute onion and jalapeno pepper, in 1 teaspoon oil.

With slotted spoon, spoon out, and put in food processor with 1 can drained red beans. Puree. (Reserve your oil in skillet)
You could just use a can of re fried beans, but the saute onion and jalapeno add to this.

Microwave boudin for 2 minutes. Let it cool, and take out of the casing. Set aside.
In skillet, with leftover oil, turn on medium heat. Place one tortilla, and brown on each side. This only takes a few seconds. Repeat until all are done.

Now, I always save my bacon drippings in a cup, and store in refrigerator. I added 1 tablespoon of bacon drippings to the same skillet. (you can use regular oil). Fry your eggs sunny side up.

In small mixing bowl, mix together all the Cajun sauce ingredients.


You can buy chili sauce at the grocery store. I make my own  chili sauce and jams. So you can always substitute different things from the store. I'll try to get better about that.

Are you ready to stack your boudin tortilla? Place tortilla on plate, spread bean mixture, boudin, and place egg on top. Top with sliced avocado, cheddar cheese, and Cajun sauce. You can eat this like a taco, or with a fork.
