Geisha's Pork and Rice

You are in for a treat now! Sweet and Sour Pork - Cantonese Style. Zhang Ziyi (Dori) out did herself. This is so scrumptious, you've got to try it!

Sweet and Sour Pork - Cantonese Style

Marinate for Pork:
1 pound pork loin or pork chops
2 tablespoons soy sauce
4 teaspoons Shao Hsing rice cooking wine
2 teaspoons sesame oil
1/2 teaspoon sugar
1/4 teaspoon salt

Other:
1/4 teaspoon ground white pepper
1/2 cup cornstarch
1/2 cup all - purpose flour
1 large green bell pepper, chopped
1 cup and 1 tablespoon vegetable oil
4 slices ginger root

Sweet and Sour Sauce:
20 ounces can Pineapple chunks in juice
1/3 cup ketchup
1/3 cup distilled white vinegar
2 tablespoons sugar
1 tablespoon cornstarch
Reserve 1/2 cup pineapple juice

Preparing Pork:
1. Cut pork into 1 inch cubes. Marinate in medium bowl with ingredients.
2. Combine cornstarch, flour in bowl. Drain pork marinate and dredge pork in the cornstarch and flour combination.

Prepare the Sweet and Sour Sauce:
3. Remove pineapple and reserve 1/2 cup juice.
4. Combine sauce ingredients to make sauce, set aside.

Cooking the pork:
5. Heat 1 cup vegetable oil in skillet or wok on high heat until hot but not smoking. Brown pork on each sides, about 3 to 4 minutes. Do not cook through. Tip: If you know how to use chop sticks, it's much easier to turn the pork with chop sticks.
6. Discard oil
7. Reheat wok or pan on high heat until hot but not smoking.
8. Add one tablespoon vegetable oil and ginger, stir fry for 10 seconds.
9. Add bell pepper and stir fry until pepper is cooked.
10. Add pineapple chunks
11. Swirl Sweet and Sour sauce into pan and bring mixture to boil, stirring constantly until thicken.
12. Add pork and stir fry for about 3 minute or until just cooked through.

Serve with rice.
