Cajun Pasta

You are going to love this one. I made it for my in-laws over Labor Day weekend. My mother-in-law, Diane loved it. She helped me stage my photo to. We had a lot of fun. 

It might be a little time consuming, but its worth it. If your trying to impress your man or friends, this is a must recipe.


Cajun Pasta:
1 package fettuccine noodles
4 cups heavy whipping cream
1 pound shrimp peeled, deveined and precooked
2 chicken breasts cut in bite-size pieces
1 package of 4 andouille sausage links cut in bite-size pieces
1 bell pepper, chopped
1 red pepper, chopped
1 small yellow onion, chopped
2 garlic cloves, minced
4 tablespoons Cajun seasoning
4 tablespoon olive oil
14.5-ounce diced tomatoes
½ cup chicken broth
1 package sliced mushrooms
3 tablespoon fresh thyme
3 tablespoon fresh basil, chopped

 Cook pasta and set aside.
Coat shrimp with Cajun seasoning and sauté in a skillet with olive oil for about 5 minutes.

 Remove from pan and cook chicken the same way, coating with Cajun seasoning.

Remove the chicken and add two more tablespoons of olive oil to pan, and cook sausage, chopped peppers, onions, mushrooms and garlic until onions are translucent.



Then add chicken broth, diced tomatoes, and stir. Add thyme, basil and heavy whipping cream and continue cooking. Add two tablespoons of Cajun seasoning. I like mine spicy, so you might not want to add only one tablespoon. Stir. I always add about one tablespoon of cornstarch to help thicken the sauce. Add cooked noodles, stir and serve.
It's not a thick sauce, very lite. Yum! Can't wait for you to taste this one.
