Tailgating Nachos

Can you believe your making three meals, starting out with Mommas Tailgating Frito Pie? This recipe is so easy and yummy to the tummy. Cayman was over for the weekend, and requested something Mexican. It was a hit.

Tailgating Nachos
1.5 pounds hamburger meat
1/2 onion, chopped
1 1/2 tablespoon cumin
1 teaspoon salt
1 teaspoon black pepper
14.5 ounce can re fried beans
1 small can sliced black olives, drained
1 bag tortilla chips
2 cups leftover cheese dip
1 1/2 cup shredded cheddar cheese
1 tomato, chopped
2 green onions, chopped
1/2 cup sour cream
4 avocados
1 tomato, chopped
1 tablespoon chopped jalapeno
4 tablespoons chopped  fresh cilantro
1 teaspoon garlic

Brown hamburger and 1/4 chopped onion, in large skillet. When your meat is brown, stir in 1 tablespoon of cumin seasoning. Let simmer.

In large casserole dish, dump chips, in the bottom. Pour re fried beans on top.
While your meat is browing, you can chop up lettuce tomato, and make your avocado dip.

Avocado Dip
Peel and mash 4 avocados.

Mix in 1/4 chopped onion, jalepenos, 1/2 chopped tomato, 1 tablespoon cilantro, 1 teaspoon minced garlic, 1 tablespoon cilantro,1/2 tablespoon cumin, salt and pepper to taste. Set aside

Drain oil off of hamburger, and add to top of chips. Pour cheese dip on top, and shredded cheese. Cook in oven for 20 minutes at 350 degrees.


Now your ready to put your toppings on. Start with lettuce, tomatoes, chopped green onions, black olives, and a dollop of sour cream and your avocado dip. Sprinkle your remaining cilantro on top..  I put jalapenos to the side. Some people do not like them.


Now doesn't that look tasty?
